Quite literally destination dining of the highest order, Tin Lung Heen occupies the 102nd floor of the Ritz-Carlton Hong Kong, housed within the city’s tallest skyscraper, the ICC Building. Window tables are the most coveted but every seat has a spectacular view, though note that the dining room looks west over the port to Lantau beyond, rather than Victoria Harbour and the skyline of Hong Kong Island. Inside is just as eye-catching, from the chandeliers and marble columns to the acres of red wood veneer. Chef Paul Lau is a master of Cantonese cooking, whether you opt for live seafood specialities or the signature honey-glazed Iberian pork char siu; weekend-only dim sum is no less luxurious. A wine list with some big-ticket bottles from Burgundy and Bordeaux lives up to the dressy, special occasion vibe of it all.
