Originally hailing from London, Zuma is now an international sensation, bringing high-end Japanese cooking and cocktails to crowds all over the world, including Hong Kong (obviously). Head to the bar for an exciting range of cocktails covering all flavour-profiles: 'Burning History' is a punchy, smoky affair blending Japanese and Islay whiskies, ginger, yuzu, honey, bitters and infusing it all with stave smoke, while at the opposite end of the spectrum the delicate 'Piña Yamamomo Spritz' is a sunny mix of pineapple skin-infused Aperol, homemade sparkling sake and yuzu tonic. Non-alcoholic concoctions, meanwhile, include the Yoshi Nura, fresh mint, ginger and lime muddled with sugar and topped with soda water. Food follows the contemporary izakaya vibe, with tempura, sushi and dumplings among the array available for late-night snacking.
