After closing for a four-month renovation in 2018, the Asia’s 50 Best regular made a stunning comeback in May 2019. Amber 2.0, now dressed in more feminine, neutral colours, no longer uses dairy, gluten, refined sugar or salt. For culinary director Richard Ekkebus, this was less about trends and more about guests’ dietary needs. His new menu highlights the natural flavours of ingredients, with vegetables at the forefront, with dishes including homemade tofu with Fukuoka tomatoes, and amadai (tilefish) with rice and sake lees (the leftovers from sake production).
