This teeny eight-seat sushi counter restaurant on the seventh floor of the Landmark Mandarin Oriental has been awarded three Michelin stars every year since 2014. This isn't just a place to eat, it's a complete cultural immersion. The room is a vision of soft, pale wood where diners sit at the counter and watch as chefs wielding glinting sushi knives deftly prepare the Edomae sushi omakase (chef's choice) menu. At its centre is head chef Satoshi Tada, who brings years of experience in traditional Japanese kaiseki cuisine and Edomae sushi (including at a clutch of starry restaurants in Tokyo). The set menu changes with the seasons and is incredibly fresh: dinner comprises six appetisers and 10 pieces of nigiri followed by soup and dessert, while at lunchtime there is a shorter, good-value option. The size of the restaurant means that the master chef is just a metre away from each guest, making the experience second to none. Rare sakes are available, with some so recherché they're not even listed on the menu – just ask the chef.
