Forget anything as prosaic as a fixed menu and prepare to put your trust in the culinary whims of Spanish chef-patron José Sogues, who also plays a large part in providing Nuum’s vibes. What Nuum lacks in the menu department, it makes up for in other ways: Sogues takes it upon himself to personally attend tables, explaining the restaurant concept and introducing the dishes of the day. Fish and seafood are a particular highlight of the seven-course experience, with ceviche, stone crab and signature oyster dishes garnering rave reviews; the Wagyu dish is another star turn. Additional boons include a pretty, shaded courtyard garden, charming staff and a drinks list whose zero-proof cocktails rival their boozy siblings. If you like your restaurants with official approval, Nuum was named the best restaurant in Ecuador at the 2025 SUMMUM awards.
