At Somos (meaning 'we are' in Spanish), chef-owner Alejandra Espinoza draws on her Ecuadorian childhood and French culinary training to create globally inspired dishes rooted in local ingredients, flavours and traditions. The extensive a la carte menu bursts with colour: purple corn dough empanadas filled with goat stew; pulled guinea pig dumplings; crab in a base of tomatoes, peanuts and coconut with sweet plantains. For the full experience, the tasting menu meanders through mahi-mahi with black garlic tapioca, a much-loved corn chowder, slow-cooked pork belly in a chocolate-based mole sauce with highland papaya, and an Andean blueberry sorbet with basil foam. Better still, all of this can be enjoyed as part of a show – music, dancing and rituals woven together for the ultimate sensory experience – in a beautiful dining room that feels like a shrine to the colours and textures of Ecuador.
