Chef Tasos Mantis learned a respect for nature while visiting his family on the rural island of Lesvos and his chef’s garden, located in the nearby village of Alepochori, provides the heritage vegetables and unusual Greek herbs that provide the backbone of the menu. Throw in techniques honed at some of Europe’s most acclaimed kitchens – Hof Van Cleve, Fat Duck, Geranium – and you’ll see why this remains such a favourite among locals and visitors alike. When the evenings are warm, a pretty courtyard garden shaded by century-old orange trees is a dreamy setting. If the weather isn’t kind, the beamed dining room with chairs in soft sorbet colours is an inviting alternative.
