A minimalist and elegant restaurant just outside Parma, Inkiostro offers a boundary-pushing take on Emilia Romagna's traditional produce. Creativity is at the heart of the cuisine, drawing on globe-trotting influences to create dishes that catch the eye. Chef Salvatore Morello curates a menu that changes every eight weeks, with six- and eight-course menus on offer for those with stamina. Expect beautifully built creations such as the raspberry meringue with tamarind, beetroot and fennel, cod confit in a miso crust with caramelised seaweed and dried scallops, and dry-aged duck, served for the whole table. The cellar counts nearly 1,000 labels and around 150 spirits and liqueurs.
