Bium

Seoul, South Korea

If Seoul can be chaotic, this place is the perfect antidote: a serene dining room whose tasting menus take their cue from Korean temple food. It’s the latest project from chef Kim Dae-Chun, the founder of 7th Door, which ranked at No.43 among Asia’s 50 Best Restaurants 2026. Here, the dishes are strictly plant-based and also avoid ‘osinchae’ – the five pungent vegetables and herbs thought to over-stimulate the senses (garlic, onions, chives, leeks and scallions). The result? Quietly restorative cooking that celebrates all things seasonal, with multiple tiny plates and side dishes that are full of complex, crafted flavours. Nothing shouts too loudly here, though every component sings, in dishes that are often deftly layered with pickled and slow-fermented produce. Book ahead: space is limited, and tables are soon snapped up.
