Nagore Irazuegi and Rodrigo García are behind this quietly exceptional address, rooted in – though not bound by – traditional Basque cuisine. It’s a place where every detail feels crafted and considered, from the minimalist dining room to the staff’s understated uniforms, designed by local label Unfeigned. Start with a Gilda 2.0, a twist on an iconic pintxo (usually an olive, anchovy and pepper, speared on a single toothpick). Here, it’s elevated into something deliciously new, with a plump anchovy draped across a puffed-up cracker, piped with olive cream and piparra emulsion and topped with olive-oil pearls. Kokotxas (hake cheeks in pil pil sauce) demonstrate the kitchen’s deft touch, while the whole turbot is a standout, cooked over a wood-fired grill. The wine list is substantial, so ease in with a cocktail from the concise, well-judged list: a Sherry Mary should do nicely, laced with espelette pepper.
