When Hugo Muñoz’s grandfather, Emilio, struck up business connections with Japan, he probably never dreamed that one day it would inspire his young grandson to found a restaurant in Chamartín. But Ugo Chan – which refers to Muñoz’s Japanese childhood nickname ‘little Hugo’ – is a culinary love letter to Japan via Iberia, featuring such innovations as spicy tuna tartar with fried egg, caviar lentil Japanese curry with smoked wood pigeon and hake cheek tempura nigiri with pil-pil sauce. The gaucho-style grilled ribeye with bone marrow nigiri combines both countries’ affinity for high-quality beef in a spectacular climax. As you might expect, sake is given top billing but cocktails are arguably more fun; choose from a shochu lychee fizz, a ‘Yumlet’ (a gimlet with yuzu) or a lapsang souchong and Sichuan pepper-infused Penicillin.
