Bar Néstor

San Sebastián, Spain

Few spots are as coveted as a place at this miniscule taverna, whether you score a seat at the lone table or standing room-only at the bar. It famously serves just four dishes, executed to perfection: tortilla, tomato salad, pimientos de padron and txuleta (bone-in steaks from former dairy cows). The tortilla's said to be the city’s best, though scoring a slice isn’t easy, as the owner makes just two a day, one at lunch and one at dinner. Roll up around 11am to join the line of hopefuls, placing your request when the bar rolls up its shutters. Come back at lunchtime to triumphantly claim your prize: an unctuous, yolk-yellow square, studded with slivers of potato and caramelised onion. The salt-scattered steaks, priced by weight, are equally delicious, while wines are a few euros a glass.
