Casa Playa offers an authentic slice of Mexico in the heart of the Wynn Las Vegas resort. The restaurant has drawn upon the talents of Boston-raised chef Sarah Thompson, who learnt her trade working at Enrique Olvera's seminal modern Mexican restaurant, Cosme, in New York City. She brings with her a lightness of touch and exceptional skill in seafood cookery, which comes to the fore in dishes such as Skull Island prawns with chilli and whole snapper tempura. All tacos are made to order, with fresh-pressed tortillas prepared with heritage grains to an ancient recipe. Dishes – the pork belly al pastor, for example, or the duck pibil – are served family-style. A good wine list is available, but even greater interest is to be found in the exceptional selection of agave spirits. Take the tequila or mezcal flight for extra fiesta vibes.
