This regal restaurant may be poised in the bustling Wynn Las Vegas resort, but it might as well be in Beijing with its Qing-inspired silks, jewel-like palette of gold and jade and outdoor courtyard featuring gilded dragons and century-old pomegranate trees. Led by chef Ming Yu, who grew up in Taishan, China, the food offers a fail-safe education in Cantonese, Shanghainese and Szechuan flavours. Alongside mainstays like pot stickers and dim sum, delicacies include a decadent Imperial Peking duck tasting menu – with the meat served five ways – and showstopping Japanese Wagyu beef from Kagoshima, Japan, tossed with heirloom sweet peppers. Elsewhere, Sampan-style Alaskan geoduck, Cambodian goby and wok-fired Maine lobster are equally arresting. Little wonder it gained the country’s first Michelin star for Chinese food. Vegetarian options are also available.
