This regal restaurant may be poised in the bustling Wynn Las Vegas resort, but it might as well be in Beijing with its Qing-inspired silks, jewel-like palette of gold and jade and outdoor courtyard featuring gilded dragons and century-old pomegranate trees. The food offers a fail-safe education in Cantonese, Shanghainese and Szechuan flavours. Alongside mainstays like pot stickers and dim sum, delicacies include Chef Ming Yu’s decadent Imperial Peking duck tasting menu – with the meat served five ways. Elsewhere, Sampan-style Alaskan geoduck, Cambodian goby and Maine lobster are equally arresting. Little wonder it gained the country’s first Michelin star for Chinese food.
