Kato is one of Los Angeles' most revered omakase-style restaurants, and its understated bar rises to the same heights with cutting-edge cocktails invented by Austin Hennelly (Booker & Dax, Amor y Amargo, Maison Premiere). Classic cocktails like the Bamboo, Bee's Knees, Milk Punch and more are re-imagined with Asian ingredients to match the bar's Taiwanese cuisine – things like bitter melon, yam, five spice, rice milk, amazake and kokuto. Hennelly's alcohol-free programme is particularly notable; one can order a la carte or enjoy an alcohol-free flight or pairing. The space is decorated beautifully but minimally, with most of the bottles stored out of sight and artwork from chef Jon Yao's grandfather, Yao Zuozhi on the walls. With only eight seats at the bar, reservations are suggested, with a few seats reserved for walk-ins.
