For a city that lends its name to a cut of beef – that New York strip is lauded the world over – it’s no mean feat to stand out in the steakhouse crowd. Enter club-like 4 Charles, a moody, subterranean temple to quality meat in the heart of the West Village. Behind it is Brendan Sodikoff, whose Chicago-born hospitality empire Hogsalt is known for its fine line in all things grilled and smoked. Here, the menu plays out as an homage to salt-crusted USDA Prime rib, roasted low and slow for 12 hours and served up with beef jus and horseradish cream. It’s backed by a concise menu that demands a second visit – crispy brick chicken with sweet garlic, Wagyu burgers (which, FYI, the team are happy to cut up to share as a starter), French dip sandwiches et al. – and a gang of elevated sides like buttery mash with roasted garlic and chicken jus, creamed spinach with piquant blue cheese and elote-style corn. The intimate space and well-mixed Old Fashioneds encourage lingering, so best to book ahead.
