Chef Jean-Georges Vongerichten presides over a global empire, but his flagship’s in New York – and a lesson in how fine dining should be done, from the moment you walk through the door. There’s that dining room, for starters: an elegant, airy space looking out on Central Park, whose linen-clad tables are attended by a fleet of impeccably-trained waitstaff. Its tasting menus show a perfect command of classic French cuisine, cleverly updated with flavours from Asia and beyond (a hit of mezcal mustard emulsion with your spiced duck breast, or foie gras with black garlic and a rhubarb-spiked nam pla). His signature egg toast, meanwhile, remains the stuff of legend: jammy, slow-cooked egg yolks sandwiched between pan-toasted brioche, topped with a quenelle of caviar and a sprinkling of chives and dill. The restaurant is a long-term tenant of Trump Hotel International, which is set in the same building.
