Based upon the tenets of ‘shifan tsui’ (or Chinese private chateau cuisine), Eight Tables offers elaborate and luxurious prix fixe tasting menus for a select number of guests each night. The setting mimics that of a nicely appointed home, intimate and cosy. Chen's menus are seasonal and dynamic, sometimes oscillating between sweet and savoury flavours at unexpected turns. Classics are indulgently reimagined, such as crispy Peking duck skin garnished with caviar or dumplings stuffed with buttery foie gras.
