Ever since opening his restaurant in 2010, Rodolfo Angenscheidt has been on a mission to put the best Paraguayan flavours and ingredients on the plate with colourful, creative, hearty dishes. Just as cassava (mandioca), an edible root vegetable, is the cornerstone of Paraguayan cuisine - so it is here, transformed with different flavours and textures, accompanied by locally-sourced meat and fish. Dishes might include 28-day grass-fed beef (slow-growing cattle, reared the traditional way), and surubí fish served with moringa herbs and orange. The haddock, prawn, parsley and creamy mash fish pie is a favourite. There's also an extensive South America-focused wine list. Food portions are well-sized, with Angenscheidt taking inspiration for some of his dishes from ancient tribal recipes.
