Arcane

Hong Kong, China

As its name suggests, this discreet dining room is tucked down a sidestreet, away from the bustle of the business district. Behind its unshowy façade, the space is pleasing to the eye, with its oak floor, crisp linen and David Mellor tableware. Interesting contemporary paintings line the walls. Australian chef Shane Osborn serves an a la carte (also daily specials and a set lunch) menu of seasonal, modern European dishes using the best British, French and Japanese produce, with each and every dish thoughtfully composed. Meat eaters can enjoy the likes of pan-roasted wagyu rump with white asparagus, black garlic and red wine jus or lightly grilled toothfish. Vegetables, leaves and fruits are sourced from a co-op of local farms that grow organically and plant-based options might include a salad of beetroot and fresh cherries; Japanese fruit tomato with fermented red pesto; or sautéed tofu and potato gnocchi with shiitake. The terrace, with its lush planting, has secret garden vibes: heated in winter or a shady escape when the temperature rises, it's a little oasis in the heart of Central.
