The brainchild by Naples-born-and-raised Antimo Maria Merone, Estro utilises modern techniques to elevate classic Neapolitan cuisine and dishes. Estro – which means inspiration in Italian – draws inspiration from Merone’s fond chilldhood memories of growing up in the Italian south. Each dish at Estro is designed to tell the story of an ingredient, region or historical event personal to the chef, while sticking to a seasonal programme. Along with dishes such as fettucce with langoustine and basil scent, and red prawn with coral panna cotta, lemon and caviar, the restaurant' cellar houses over a thousand wines from across the world, albiet with a heavy Italian presence.
