Chef Ricardo Chaneton brings his eclectic mix of Italian and Venezuelan heritage to his Hong Kong restaurant, Mono. Its refined tasting menu boasts unusual textures and flavours like King crab with caviar and coeur de boeuf with fresh hazelnut, while each dish is deeply rooted in Latin American tradition. Mole has been a signature sauce since day one and help defines the restaurant. For dessert, diners are in for a treat, as Mono makes its own chocolate from scratch. Chaneton educates his guests with a sampling of cacao pulp, nibs, chocolate paste, mousse and bonbons. The intimate space presents a homely atmosphere, with just 30 seats set along the chef’s counter. Music is selected from Chaneton’s father’s large collection of vinyl, echoing another of the chef’s creative passions.
