Chef Ricardo Chaneton brings his eclectic mix of Italian and Venezuelan heritage to his Hong Kong restaurant, Mono. Its refined tasting menu boasts unusual textures and flavours like King crab with caviar and coeur de boeuf with fresh hazelnut, while each dish is deeply rooted in Latin American tradition. Thier 21-ingredient mole has been a signature sauce since day one and the preparation of Danish langoustine with notes of cacao has been a notable fan favorite. The kitchen also makes its own chocolates, and allows diners an unforgettable taste and experience for dessert. Chaneton educates his guests with a sampling of cacao pulp, nibs, chocolate paste, mousse and bonbons. The intimate space presents a homely atmosphere, with just 30 seats set along the chef’s counter. Music is hand-selected from Chaneton’s father’s large collection of vinyl, echoing another of the chef’s creative passions.
