Hop Sze
Hong Kong, China
This neighbourhood eatery started out in San Wan Ho, behind a nondescript shopfront, where chef Wong Wing Kuan’s humble, home-style cooking soon gained a cult following. His dishes were familiar and reliably delicious, whether it was tea-smoked chicken, a tasty dried seafood stir-fry, or a super-sized portion of baked pork chop rice, smothered in tomato sauce and cheese. They're all still on the menu at its new incarnation in Tin Hau, along with the signature steamed threadfin, infused with huang jiu (yellow wine). The premises are slightly larger, but tables are still tricky to come by: this is one to reserve well ahead, if you’re dreaming of that heavenly pork chop. Note that Hop Sze also has an outpost at the swanky Club Bâtard, though you’ll need an invitation – it’s a private members’ club.
