Alain Passard is notable for actually cooking most days at Arpège, the restaurant he bought 33 years ago from his mentor, Alain Senderens. He’s held three Michelin stars since 1996 and Arpège leapt into the top ten of the World’s 50 Best Restaurants in 2018. Vegetables from his three gardens, delivered each day before lunch service, are treated like royalty and transformed into plates as pretty as Versailles. While the focus is still very much on veg, meat and fish are back on the menu after Passard famously turned Arpège vegetarian in 2001. It comes at a price: the evening Earth and Sea tasting menu costs €420 ($470).
