Jung Sik Yim – who trained under highly acclaimed NYC chef David Bouley – favours a whimsical interpretation of contemporary Korean flavours. Amuses bouche such as tiny bulgogi (barbeque beef) sliders presented on white plinth-like sculptures are followed by tasting menus that showcase crispy octopus tentacle and innovative twists such as a sauce made of sabayon wine infused with kimchi.
