Parachute is a byword for contemporary Korean-American cuisine. Look for the neon green 'P' and you’ll know you’re in the right place. On the scene for nearly a decade, it’s the work of husband-and-wife-team Johnny Clark and Beverly Kim. The friendly neighbourhood spot buzzes with local spirit and while the menu may be small, it fires on all cylinders. In typical fusion style, Korean favourites are dotted with American ingredients and benefit from the application of on-the-button modern technique. Golbaengi muchim sees Massachusetts welks paired with Asian salad and somyeun noodles, with a good kick of brown rice gochujang made by five generations of female farmers. Yuk hwe (beef tartare) is served meatball-style with caviar, cucumber and apples. Gudeungeo gui marries Boston mackerel with smoked sea slat before being grilled to perfection over eucalyptus charcoal. On the liquid front, traditional makgeoili, soju and chungju from small producers all present and accounted for.
