Here, Muñoz's culinary roots sit sympatico to New York’s multicultural swagger and are executed by award-winning local chef John Fraser with aplomb. Amid abundant greenery, a trio of wood-fired grills are at the heart of the dining room, dishing up the likes of tender pollo à la brasa and grilled octopus with anticuchera and potato cream. Ceviche, of course, is omnipresent – see East Coast oysters with aji Amarillo; ahi tuna with shiso and miso and pattypan squash and jicama kissed with the sunshine brightness of satsuma leche de tigre. Elsewhere wok dishes and superlative veg plates speak to Incan, Japanese, Chinese and Mayan foodways, while the punchy pisco bar is reason alone to visit.
