Calling all food lovers: the 50 Best Signature Sessions series, featuring one-time-only culinary experiences that see chefs collaborate across borders and cultures, is heading to Singapore for the first time as part of Asia’s 50 Best Restaurants 2023. Taking place from 25-27 March, here’s everything you need to know ­– including how you can nab a spot at these special tables

Florilège x Labyrinth

Where: Labyrinth, 8 Raffles Avenue, Esplanade Mall, #02-23, Singapore 039802

Who: Forward-thinking Japanese chef Hiroyasu Kawate of Florilège in Tokyo shares a culinary ethos focused on sustainability and seasonal produce with Singaporean chef LG Han of Labyrinth, the winner of the Sustainable Restaurant Award 2021. With both restaurants having been voted into several editions of Asia’s 50 Best Restaurants, the chefs are preparing to unleash their creativity into a menu featuring favourites from their two spots.

What else: Expect an exceptional eight-course tasting experience served in Labyrinth’s elegant surroundings, priced at S$388++ per person with the option to add wine pairing for S$158++.

Coda @ Mandala Club

Who: The World’s Best Pastry Chef 2022, René Frank of Coda in Berlin, is taking his unique concept for a dining experience entirely inspired by desserts and the pastry arts to Singapore for one night only. Frank and his team will be hosted at the city-state’s leading private members venue, Mandala Club, where they will re-create Coda’s signature menu from Germany for Singapore’s most discerning palates.

What else: Although Frank’s menu is inspired by desserts, expect a truly unconventional experience where each dish seamlessly fuses sweet and savoury elements and techniques and is accompanied by a specially crafted sip. The seven-course menu is priced at S$398++ per person.

Mono x Claudine

Who: With the opening of Mono in 2019, Venezuelan chef Ricardo Chaneton brought a refreshing taste of Latin America to Hong Kong, capturing the imagination of critics and foodies. A newcomer to Singapore’s dining scene, Julien Royer’s Claudine shares the same love for honest home-cooking and convivial meals, but with a focus on French dishes and techniques. Chaneton will collaborate with Claudine executive chef Julien Mercier and head chef Loïc Portalier to curate a festive Latin-French brunch experience.

What else: The nine-course menu will celebrate both French produce and Latin American flavours woven together with creative flair and finesse, priced at S$248++ per person.

Le Du x Kyo Bar x Born

Who: Two of Bangkok’s hottest chefs will be heading to Singapore to help create this unique gastronomic experience: Thitid ‘Ton’ Tassanakajohn, who heads up Le Du and Nusara (both voted into the top 10 of Asia’s 50 Best Restaurants 2022), and pastry chef Dej Kewkacha, the creator of acclaimed omakase dessert venue Kyo Bar. Chef Zor Tan is opening the doors of his Born kitchen to the Thai duo, where the chefs plan to celebrate their shared Chinese heritage, individual roots and French-Japanese flair with a series of unique dishes.

What else: The menu will celebrate Tan and Kewkacha’s 16-year friendship and the three chefs’ mutual respect and admiration through an eight-course dining experience priced at S$288++, optionally complemented by a three-glass wine pairing for S$118++.

La Cime x Lolla

Who: Chef Yusuke Takada has built a cult following at La Cime in Osaka, where his signature melding of Japanese produce with French techniques and humorous style has seen his venue voted No.6 in Asia’s 50 Best Restaurants 2022. Filipina chef Johanne Siy, recently announced as Asia’s Best Female Chef 2023, will complement this with her own brand of Mediterranean-influenced cuisine much loved by Singaporean diners.

What else: The eight-course menu will be themed around ‘signatures and new inspirations’ and priced at S$328++ per person.

Potong x Burnt Ends

Who: Pam Pichaya is the young Thai-Chinese-Australian chef behind Potong, one of the hottest restaurants to open in Bangkok in recent years. She will collaborate with Australian barbecue master Dave Pynt at his recently relocated Burnt Ends, a mainstay of Asia’s 50 Best Restaurants, where the chef has been enchanting diners with high-end, grill-focused takes on local ingredients for nearly 10 years.
