Aparthotel-shop-restaurant hybrid Graanmarkt 13’s motto is ‘stay as long as you want’ and, going on chef Seppe Nobels’ menus, diners will want to linger. The lower-ground-floor dining room is fronted by a flagstone-clad terrace for alfresco meals on warmer days, with clean, Scandi-chic and potted plants influencing the aesthetic throughout. Dishes are equally green: honey and herbs from Nobels’ rooftop garden, meat and produce from local farmers, and fish from ethical fishermen. The weekly-changing menu comprises two courses at lunch and three at dinner – expect the likes of penny bun with egg, leek, buttermilk and purslane, and venison steak with seasonal veg.
