In his aim to create an accessible destination restaurant that felt “a little like Ibiza on the North Sea, with funky music playing in the background”, chef Sergio Herman has succeeded. Herman, who braved closing Oud Sluis, his Michelin three-star family restaurant and World’s 50 Best regular, to pursue new challenges, opened Pure C in 2010 on the windswept Cadzand beach. The dining room boasts curvaceous white banquettes, a soulful soundtrack and panoramic coastal views. To experience the best of youthful head chef Syrco Baker’s cuisine, opt for one of the tasting menus, which feature super-fresh local produce in meze-like creations.
