F.K.A.B.A.M. stands for ‘Formerly Known as Black Axe Mangal’ but despite the change in name after re-opening post-lockdown, it’s still essentially the same high-volume, high intensity dive pumping out high-octane flavours. F.K.A.B.A.M. is a mash-up of the nose-to-tail British bistro coking of St John Bread and Wine, where chef-patron Lee Tiernan was head chef for a decade, with the Turkish mangal grills up the road in Stoke Newington where Tiernan loves to eat on a rare night off. From a five-course set menu, lahmacun-like flatbread comes topped with lamb offal while doughy hot pockets tear open to reveal steaming innards of ox tongue and melted Ogleshield cheese, though influences are just as likely to be south-east Asian as Middle Eastern; there’s a vegan menu, too, and low-intervention wines to wash it all down with.
