David Muñoz – who learned the foundations of Asian cuisine at London’s Nobu and Hakkasan and runs Madrid’s only three Michelin-star restaurant (DiverXO) – serves elaborate, intricate dishes inspired by Europe, East Asia and South America. Dumplings bursting with crispy pig’s ear sit alongside Galician octopus served with Mexican mole, while guava cheesecake with caramelised popcorn ends proceedings with flair.
