Practically synonymous with the word ‘exclusive’, this decommissioned Victorian fire station and subterranean smoking lounge was, for a time, the most difficult place to secure a booking in London. While certain celebrities are still regulars, the hype machine has generally moved on, leaving behind an excellent yet informal restaurant. The menu emphasises seasonality and healthy eating. Trout crudo sits alongside roast brill with white strawberry and tarragon sauce while his signature crab donuts are as much of a talking point as ever.
