Follow the lantern-lit path through the sliding doors of Shoun RyuGin and be transported from the streets of Taipei to another world. The restaurant (an offshoot of Tokyo’s renowned Nihonryori RyuGin) masters in Japanese kaiseki, Asia’s equivalent of haute cuisine, but with a Taiwanese twist. Served on antique tableware, the menu – a multi-course marvel – earned it a place on Asia’s 50 Best list and two coveted Michelin stars. Chef Ryohei Hieda champions the Taiwanese larder in his creative Japanese cooking. Highlights include a raved-about squab from Pingtung City, grilled over charcoal and rosemary, fresh-as-can-be sashimi and fruit-led desserts. There are no walk-ins, so be sure to book ahead.
