Taiwan-born, French-trained chef André Chiang takes an innovative approach to Sichuan cuisine at this lavish restaurant within the luxury Wynn Palace resort. Hot and sour soup assembled at the table, and dan dan noodles steeped in broth and extracted through the spout of a teapot are typical of the dizzy creativity of a 15-course tasting menu that is designed to delight each of the senses. Elsewhere, expect to become acquainted with fresh takes on the Sichuan staples of hot and numbing and fish fragrant and experience how ingredients such as Périgord black truffle and duck foie gras respond to the fiery treatment. Staff are as smart as the setting, a gold-hued dining room lit by a Murano-glass chandelier where widely spaced, white-clothed tables are overseen by a pair of lion sculptures.
