Elsewhere, playful presentation and a zero-waste ethos drives the terroir-led tasting menu further. Yesterday’s potato bread is served with oregano oil, turbot comes three ways – ceviche with buckwheat milk, roasted with burnt wood oil and broth with horseradish – while for desert, expect almond with smoked malt and glacé kombucha mother.
