Climb the stairs of this concrete-clad warehouse in Copenhagen’s edgy docklands to discover Matt Orlando’s thrilling Scandi fare. The influence of his tenure as head chef at Noma does not go unnoticed in the belt-and-braces approach to seasonal produce – much of which comes from the on-site garden. Elsewhere, playful presentation and a zero-waste ethos drives the terroir-led tasting menu further. Yesterday’s potato bread is served with oregano oil, turbot comes three ways – ceviche with buckwheat milk, roasted with burnt wood oil and broth with horseradish – while for desert, expect almond with smoked malt and glacé kombucha mother.
