Relæ is the neighbourhood joint everyone wants nearby. Brainchild of Noma alumi Christian Puglisi and Jonathan Tam, it’s a former regular on the World’s 50 Best list. Set in the hip, creative Nørrebro neighbourhood, it swerves fussy fine-dining tropes in favour of cool aesthetics and convivial staff. Guests pour the wine and plunder silverware from drawers that slink from the table as they dine. The cooking, meanwhile, is as cutting edge as it gets. Informed, but not restricted, by the New Nordic model, deceptively simple plates push the limits of flavour. Think pork with elm shoots and an XO sauce derived from charcuterie.
