The new kid on the block, Euphoria, is a recent addition to Singapore’s ever-evolving gastronomic scene. Opened in 2020 by esteemed chef Jason Tan, the intimate space seats 26 and hosts a genuine experience for all the senses. After a eureka moment with a Cévennes onion, Chef Tan continues the journey among all manner of botanicals and vegetables. Following a philosophy and style that Tan himself coined ‘gastro-botanica’, the heavier sauces and dishes of French haute cuisine have given way to ‘La Symphonie de Légumes’. White asparagus, watermelon radish and violin zucchini feature on an extensive seven-course menu; for dessert, a dish named Alice in Wonderland is appropriately fantastical, adorned with cornflakes mochi, macadamia and beetroot financier.
