Chef Takeda Kenji’s Japanese roots inform every aspect of his first Taiwanese endeavour: in true omakase style, guests are seated directly in front of the chefs and there's a sense of reverence and ceremony, enhanced by the house rules ̶ such as 'no loud conversation'. The interior too feels almost monastic, all pale raw stone walls, floors and counters, meaning proceedings in the kitchen receive diners' full attention. And when it comes to the food, you're looking at a delectable merging of Japanese and French flavours, bolstered by Taiwanese seafood, making the most of ingredients like king crab and abalone. Although it only opened in 2021, Liberté quickly nabbed spot No.72 on Asia's 50 Best Restaurants 2022, and a Michelin Star to boot. Definitely one to watch.
