Daisuke Nakazawa creates an upscale 21-course omakase menu that focuses on Edomae sushi (invented in Tokyo about 200 years ago). The menu changes daily according to what is caught and could include spot prawns, Dungeness crab, Pacific barrelfish or goldeneye snapper. Nakazawa likes to create a tasting experience, so expect to try California and Japanese sea urchin together or a selection of tuna. Reserve a stool at the kitchen bar for a close-up of masterful knife skills. The Japanese tea and sake lists are also excellent.
