The three-time Best Restaurant in Colombia from 2013 to 2015, Criterión is the flagship of the Rausch brothers, who own more than 10 restaurants across the country. Founded in 2004, it was one of the first in Colombia to serve a tasting menu and now offers two options: one focused on classics and another showcasing the bestselling dishes since the restaurant’s inception.

With chef Jorge at the helm and pastry chef Mark on desserts, Criterión takes diners through innovative dishes like smoked aubergine with guava hoisin sauce and foie gras tartelette with chocolate and tamarind. Lionfish features heavily on the menu, as Jorge has long fought to promote consumption of the invasive species that poses a threat to the ocean ecosystem. The bright, smart dining room is located in Chapinero neighbourhood.
